Hobak, as known as Korean summer squash, is used a lot to make Korean food. Hobak Bokkeum is supposed to be the best recipe of its kind. If you are not good at eating spicy food, it is a great option of banchan. Its mild and savory flavor can be added to Bibimbap as well.
