Dating back to as early as the Goryeo dynasty before refrigeration was invented, this dish has a longstanding history. Fishermen in the 14th century found that unlike other seafoods that needed to be preserved with salt, skate meat could be preserved with a natural fermentation process and could be stored and transported for long periods of time without going bad. Nowadays, skate is served sashimi style and often paired with alcohol.

Hongeo sashimi is a silky, melt in your mouth dish with a unique depth of flavor and a distinctly potent taste. It does not have the characteristic strong smell or taste that skate often has, but instead a deliciously harmonious marinade that balances the flavor of radish and cucumber with sweet and sour red pepper paste and spice.
