Dating back to as early as the Goryeo dynasty before refrigeration was invented, this dish has a longstanding history. Fishermen in the 14th century found that unlike other seafoods that needed to be preserved with salt, skate meat could be preserved with a natural fermentation process and could be stored and transported for long periods of time without going bad. Nowadays, skate is served sashimi style and often paired with alcohol.
