Samgye-juk is a quintessential summer dish in Korea. Packed with rice, shredded chicken and veggies, this dish is sure to hit the spot. Ginseng is highly nourishing, and helps to maintain the body's immunity and to relieve fatigue. The rich, chicken broth and meat contain essential amino acids and vitamins, warming the body and replenishing health.
This recipe evolved from traditional fish porridge, which is mainly a locally-known dish. In the Pyeongan-do region in Korea, freshwater fish were traditionally caught in rivers and cooked to make a porridge. In the summer months, chicken was added to the dish for extra nourishment. The idea of eating the porridge in the summer is to replenish nutrients lost from sweating in the heat.
