Kkakdugi is the Korean-style of Kimchi made with radish rather than napa cabbage. With a crisp texture and slightly-sweet taste, these cubes of kkakdugi are a perfect, punchy pairing with a soup or are a tasty side dish on their own.
Kkakdugi has a royal history. According to a cookbook entitled Joseon Yorihak ("Korean Gastronomy") published in 1940, kkakdugi was originally created by Princess Sukseon. The dish was made for the royal court, and was initially created accidentally. It was so good that the dish became a royal staple and common food in Korea.
