Soegogi jangjorim is another widely popular side dish in Korean home cooking. Made with thin, juicy cuts of marinated shredded beef, the meat is slow-cooked for ultimate flavor. It is braised alongside onion, radish and ginger in a marinade of soy sauce, garlic and pepper for a complete flavor and texture experience.
Jorim, which means ‘to boil down’ is a culinary technique that had been done for ages, but hadn’t been officially named until the 19th century. Soegogi jangjorim was first described at that time in a cookbook. It is now well-known and loved across Korea and beyond. Jangjorim means 'a dish made by marinating in soy sauce.’
